Ingredients 

  • Bamboo sushi mat to roll the sushi
  • 8 nori sheets
  • 2 cups sushi rice, rinsed and drained
  • 2 cups of water
  • 2 tablespoons sugar
  • ½ tsp salt
  • ¼ cup rice vinegar
  • 2 tbsp toasted sesame seeds
  • 2 tbsp black sesame seeds
  • 1 small cucumber, de-seeded and julienned cut (same length as nori sheets)
  • 1 medium ripe avocado, julienned cut into 0.5 cm thick slices
  • 3 ounces crabmeat, julienned(you may also use imitation crab meat)
  • Soy sauce, wasabi, and pickled ginger slices (optional)

Instructions 

  1. In a saucepan, let the rice soak in water for about 30 minutes. Then bring the water to a rolling boil. 
  1. Reduce the heat and let the rice simmer in the covered saucepan for about 15-20 minutes. Remove the saucepan from the heat when rice becomes tender. Do not immediately uncover the rice. Let the rice sit for 10 minutes undisturbed.
  1. In a bowl, whisk together vinegar, sugar, and salt until homogenous.
  1. Transfer the rice to a bowl and toss them with the vinegar mixture using a wooden paddle. Clever with a damp cloth. Do not refrigerate.
  1. Line the bamboo sushi mat with plastic wrap. Scoop  3-4 cups of rice. Place them onto the plastic wrap and form into an 8-inch square using a spoon. Top with one nori seaweed sheet.
  1. Place the filling(meat, fruit, cucumber) and roll it while removing the plastic wrap. Leave out 1 or a ½ inches from the top and bottom edges.
  1. Roll the sushi onto a plate containing sesame seeds for coating.
  1. Cut the rolls into 8 pieces and serve with soy sauce, wasabi, and pickled ginger slices.
