How to make Claussen pickles?

  • White vinegar

  • dill seed
  • dried garlic
  •  fine mesh colander


In a big pitcher, mix vinegar and water to form the brine. Add salt, black peppercorns, red pepper flakes, coriander seed, and mustard seed. Stir the salt until it dissolves. Place aside.

Cucumbers should be well cleaned before trimming each one’s blossom end by 1/8 inch. Each cucumber should be cut in half lengthwise.

Between two sterile quart-sized jars, equally, distribute the dried garlic and dill seeds. Cucumber halves should be packed into jars as tightly as possible.

To combine ingredients, re-stir the brine. Over a sizable dish or measuring cup, spread a colander with fine mesh. Fill the colander with brine and pour through it, capturing the brine solids.

This measuring cup and the two jars will not hold all of the water. The vinegar and water mixture will be thrown away once you’re done; the idea is to save the brine solids and use them.

Distribute the solids evenly among the jars when they have all been taken out of the brine. Pour enough brining liquid from the measuring cup into the jars to completely cover the cucumbers.

Your brine level should cover your cucumbers and extend to the point where the twisting starts at the bottom of the jar neck. Don’t overfill the jar because the cucumbers will lose some liquid as they brine. Any residual brine should be thrown away.

Put a lid on top and cover loosely, but do not close and seal. Place the cucumbers in the refrigerator for an additional two to three days, or until they completely taste like pickles, after one day on the counter (out of direct sunlight). Put jar lids on tightly and store in the fridge for up to six months.
