  • One bunch of asparagus.
  • One carrot, cut into thin, matchstick-like sticks
  • Make sure to include the green parts when chopping your spring onions!
  • Slicing 2 handfuls of shiitake mushrooms
  • Bean sprouts, 1 to 2 cups
  • Red bell pepper, seeded and cut thinly into strips
  • Sherry, or cooking sherry, to taste (about 2–3 tablespoons)
  • To Make Stir-Fry Sauce, Combine:
  • Oyster sauce, 3 tablespoons
  • Approximately 1 tablespoon of fish sauce
  • Brown sugar, 2 tablespoons
  • Spice it up to your liking with 1 teaspoon of finely chopped red chile, dry chile flakes, or hot sauce.
  • Discretionary 1 teaspoon. of shrimp paste
  •  2 teaspoons of sesame oil


Snap off the ends of the asparagus once they have been cleaned.  You may either throw away the ends or use them to make juice or chicken stock.

Other veggies should be prepared in the same fashion and placed in separate heaps near the burner.
