Most vegetables can be immersed in boiling water before they can be frozen, this is called blanching. This implies you should boil the entire or chopped-up pieces of veggies for one-two minute before plunging them into chilled water to stop the cooking. Freezer burn will be prevented from your vegetables. 

They can last for up to a year if frozen correctly. Eggplant, Belgian endive, Artichokes, lettuce, greens, potatoes, radish, sprouts, and sweet potatoes should not be frozen.

Which Vegetables Shouldn’t Be Kept in the Fridge?

Garlic and onions are in the onion family and should be kept cool, dark, and dry, but away from other foods due to their strong scents. Also, avoid using plastic bags to wrap them in. Shallot, onions, and cloves are begging to be allowed to breathe! It’s also not easy to breathe through a plastic bag.

Garlic and onion can be kept on the counter if they are still in their skins, but once peeled or sliced, store them wrapped in the refrigerator. They should be kept separate from potatoes because potatoes generate ethylene, which might lead to sprouting.

Refrigeration is not recommended for potatoes, taro, sweet potatoes, or yuca (cassava, manioc). Then store them in a cool, dark place with plenty of ventilation, loosely piled in a bowl or containers rather than in plastic bags (which will make them rot). 

Even when ripe, tomatoes (actually a fruit) must be left out on the counter (they will lose flavor when chilled). Winter squash (squash with hard shells like delicata, butternut, and kabocha) can be kept out on the counter or under the sink.

Cucumbers must be stored at room temperature. Also, store eggplant and pepper at room temperature. If consumed promptly after withdrawal from the refrigerator, they can be kept in the fridge for one to three days.
