Wild rice

Wild rice, despite its name, is not rice at all, but rather a distinct variety of grass. The grains are dark (brown and black) and three times longer than regular rice, with an interior that is light and delicate. 

It is commonly used in eastern cuisine, but iit is produced in only two countries (the United States and Canada).

Its nutritional benefits are especially appealing since this grain is low in fat and high in protein, lysine (a helpful amino acid to the body), and fiber. It is also high in potassium, phosphate, and vitamins.


Arborio rice

Arborio rice has a high starch content and adds creaminess to meals, making it popular in risottos, particularly in Italian cuisine. It has a more rounded grain and a high concentration of starch, giving it a creamy texture. 

It can also absorb spices really well. As a result, it is best suited for risotto recipes. It has the same nutritional value as regular rice since it has no husk and does not go through any treatment that preserves its nutrients,” Audrey Abe explains. It may be bought in regular supermarkets, and it is prepared in the same way as ordinary rice.

Carnaroli rice

This starch-rich kind of rice produces a substance after cooking that gives foods a highly creamy texture. This rice is mostly used to make risottos. The grain’s properties allow it to absorb the flavor of the numerous items added to the meal.
