The difference between fridge and freezer is that fridge is set between 35 and 40 degrees fahrenheit and the freezer is set to temperatures below zero degrees celsius (32 degrees fahrenheit) (usually 0-5 degrees celsius). Fridge is used for short term storage and freezer is used for long term storage.

What is a fridge?

Fridge is a household kitchen appliance used for keeping food fresh and cool by refrigeration. The temperature range inside a fridge is 0 – 4℃. 

How does a fridge work?

The compressor of the fridge circulates something known as the refrigerant throughout the fridge. The condenser which is usually placed outside on the back of the fridgem helps in relieving the heat that builds up in the refrigerator. The thermostats inside the fridge are important for temperature regulation.

Once the fridge is on, the compressor draws the refrigerant (cold) in and condenses to a gas which is pushed towards the condenser, reverting to a liquid state by cooling. It then moves towards the evaporator which has a role in vaporising the liquid refrigerant that absorbs heat through the fridge wall.

What is a freezer?

A freezer is a home appliance kept in the kitchen to freeze foods for the purpose of increasing the shelf life and prevention from damage or degradation of foods that can be spoiled easily. 

How does a freezer work?

A curly metal tube called a cooling pipe is inserted inside the walls of the freezer. The cooling pipe contains a special liquid that can evaporate readily. This pipe is connected to a pump that sucks vapour formed from the pipe which in turn causes more liquid to turn into vapour, which cools the inside of the freezer.

The pump collects vapour from the pipe, squeezing it into another curling pipe on the outside back of the freezer pushing the molecules closer, turning them into liquid again. 

When the gas is turned to liquid, latent heat is produced and the back pipe of the freezer begins to heat up allowing the heat to escape into open air. The liquid then leaks through a very thin pipe back into the cooling pipe and the cycle starts again.

What should be the duration of storage of different food items in the freezer?

  • Cream- 2 months
  • Hard cheese – 6-12 months
  • Beef roasts and steaks – 6-12 months
  • Hot dogs and luncheon meats – 1-2 months
  • Cooked leftover meat – 2-3 months
  • Fish – 6-10 months
  • Fruits – 8-12 months
  • Vegetables – 8-12 months
  • Pastries and pies – 1 month upto a year
  • Cooked leftover poultry – 4-6 months

What are the common mistakes when storing food?

  1. Food is overstuffed in the fridge or freezer which hinders the working of the appliance
  2. Meat and fruits or vegetables stacked over one another can cause cross contamination.
  3. Root vegetables, such as carrots, radishes, tomatoes and peppers, can deteriorate faster or lose their flavour when stored open or for too long in the fridge or freezer.
