  • With water, bring all of the pineapple pickle ingredients to a boil. Toss in the pineapple chunks and the pickle. Allow cooling before transferring to a bowl, covering with cling film, and refrigerating for at least 30 minutes to marinate.
  • On one side, spread mayonnaise on the sourdough pieces. In a frying pan over medium heat, melt half the butter and add the rapeseed oil. 
  • Put one slice of bread in the pan, mayo-side down, and top with a slice of cheddar, some spring onion, pickled pineapple, and additional cheese and sriracha, to taste, once the butter has melted. Place the mayo-side up the second slice of bread on top.
  • Cook for about 3 minutes, or until the bottom of the sandwich is crispy and golden, then flip it over and spread the remaining butter on top. 
  • Cook until that side is crisp and brown, and the cheddar has melted. Serve immediately after slicing in half.
