For half-n-half preparation, if the cream is high in fat then use more content of milk like a half cup of heavy cream is mixed with 3/4 cup of milk, but if the fat content in household milk is not more then we can adjust the ratio of heavy cream according to our need of texture in half-n-half.

Half-n-half substitute: Milk + Butter

Milk and butter mixture is another good substitute for half-n-half. In this substitute one tablespoon of butter is used which is placed in a liquid measurement pot where the rest part of the pot is filled with whole milk, it makes one cup substitute for half-n-half.

There are some terms and conditions which are used while cooking or baking products like it must be heated to melt in case of cooking and it should be blended finely like its granules or solidified form of butter should not be visible, this is a good step before baking. As it is finely blended then mix in with dry ingredients.

Evaporated milk

Evaporated milk is also one of the perfect alternatives to the original product half-n-half. It should be used in an equal ratio as one by one with the original product. As every product has its unique taste that affects the taste and flavour of the recipes to some extent. Evaporated milk will modify the taste of the recipe, it also has a lighter shade of caramel taste. 

The content of nutrients is almost similar to both the evaporated milk and its original product half-n-half, like fat content is about 10 per cent in evaporated milk while half-n-half has 12 per cent of fat content.

Evaporated milk is a type of milk where water is removed by pasteurization or by using some other techniques.

Yoghurt or Sour Cream

Sour cream and yoghurt, both have a tangier flavour and taste. Both of these can be used in equal content as compared to half-n-half as one by one ratio. 

Yoghurt or sour cream are not recommended for some of the recipes such as sauces and soups because in these recipes yoghurt and sour cream’s ingredients can be detached by directly heating which may result in the formation of chunks or chalky texture.

For other recipes like ice cream, we can substitute the half-n-half fully with these substitutes. Milk or cream can be used in base formation for dessert recipes like custard.
