  • Toss the chicken thighs in a bowl with 1 teaspoon turmeric and a pinch of salt. In a large frying pan or broad flameproof casserole, heat the oil and brown the thighs on all sides. Remove the pan from the heat. Cook for 5 minutes, or until the onion has softened.
  • Cut all of the flesh from one of the mangoes with a knife, scraping as much as you can from the stone. Combine the korma paste, ginger, and quartered onion in a food processor. Blend to a paste, then pour into the pan and simmer, stirring occasionally, until softened.
  • Add the remaining turmeric, cumin, and onion seeds and cook for a few minutes over high heat. Toss the chicken back into the pan. Combine the coconut milk and stock in a mixing bowl. Bring to a low boil, then reduce to low heat and cook for 20 minutes, covered.
  • Uncover the pan and continue to cook for another 25-30 minutes, or until the chicken is completely cooked, adding a few drops of water as needed to maintain the sauce saucy.
  • While shredding the chicken with two forks, slice the remaining mango and stir it in to heat through. Season to taste and serve with basmati rice, naan bread, chutney, lime pickle, and our side dishes, if desired.
