  • 2 ounces/55 grams (1/2 cup) self-rising flour, sifted
  • 1 teaspoon ground mixed spice
  • 1 1/2 teaspoons ground cinnamon
  • 4 ounces/110 grams (about 1 cup) beef or vegetarian suet, shredded
  • 4 ounces/110 grams (scant 2/3 cup) dark brown sugar, packed
  • 4 ounces/110 grams (1 cup) fresh breadcrumbs
  • 1 ounce/25 grams (1/4 cup) whole almonds, coarsely chopped
  • 2 large eggs

Instructions 

  1. In a large mixing bowl, combine dried fruit, candied peel, apple, and orange, and lemon zest and juices. Then stir in the brandy. Wrap the bowl with a clean tea towel and leave it for at least 2-4 hours or overnight for best results. 
  1. Lightly grease a 2 1/2 pint pudding basin with butter. 
  1. In another bowl, mix the flour, mixed spice, and cinnamon until well-combined. Then stir in the suet, sugar, breadcrumbs, almonds, and the soaked fruit mixture. Mix well.
  1. Lightly beat the eggs in a bowl and tip the bowl into the dry ingredients. Stir until well-combined. 
  1. Pour the pudding mixture into the greased pudding basin. Level the surface of the mixture using the back of a spoon. 
  1. Cover the pudding basin with a pleated sheet of baking paper, then with a pleated sheet of aluminum foil. 
  1. Secure the sheets in place using a kitchen string. Use another string to loop across the bowl surface and then around the bowl to make a string handle.
  1. Boil water in a saucepan and place a steamer insider the simmering water. Lower the pudding basin into the steamer and cook the pudding for about 7 hours. Top up more water if needed.
  1. The cooked pudding has a nice brown color. To check for doneness, insert a skewer or toothpick into the center of the pudding. If it comes out clean, the pudding is ready.
  1. Feed some brandy to your pudding and replace the old greaseproof paper and foil with fresh ones. 
  1. Store the pudding in a cool, dark, and dry place for about 4-5 weeks or until Christmas. Feed the pudding with small amounts of brandy during this time. 
  1. Before serving, steam the pudding for an hour.

  1. Zest your oranges and lemons before squeezing them for juice. Because the peels do not zest properly. 
  1. 4-5 weeks of maturing allow the flavors of the pudding to mellow and become more complex. So, you might need a bit of planning if you want to enjoy the traditional Christmas pudding.

  1. Christmas pudding can be stored anywhere cool, dark, and dry. Reheat the pudding on Christmas day to revive its freshness. 
  1. After reheating for about an hour in the steamer, serve the pudding with brandy sauce, brandy butter, or custard.
  1. Leftover Christmas pudding can be refrigerated or frozen after wrapping in foil. Reheat the pudding in the oven without removing the foil wrap.
