  • cauliflower
  • onion
  • olive oil

1. Preheat the oven to 425 degrees Fahrenheit.

2. Place a third of the cauliflower in a bowl and coarsely grate it. Break the remaining cauliflower into florets about 114 inches wide and set aside with the cauliflower leaves, if any, and the onion in a separate bowl. Spread on a large parchment-lined baking sheet after tossing with 2 tablespoons oil and half teaspoon salt. Roast for 20 minutes, or until golden brown and cooked through. Remove the baking sheet from the oven and set it aside to cool.

3. Toss the roasted vegetables with the remaining 3 tablespoons of olive oil, the grated cauliflower, parsley, mint, tarragon, pomegranate seeds, pistachios, cumin, lemon juice, and 14 teaspoon salt in a large mixing bowl once cool. Toss gently but thoroughly to combine and be ready to serve it.

How should pomegranates be stored?

When you’ve found a deliciously ripe piece of fruit, you’ll need to know how to keep it fresh until you’re ready to eat it. Your fruit will stay fresh for up to three months if kept whole and stored in plastic bags in the fridge. 

You can also keep your pomegranates on the counter for short-term storage—just keep them out of direct sunlight and they’ll keep for up to four days.

Finally, if you’ve already cracked open a pomegranate and mined the treasure within, any uneaten arils can be refrigerated for up to three days—which is plenty of time to use them up, given that these gems can be enjoyed at breakfast, lunch, and dinner.
