How to steam a Christmas pudding in the oven?

Preheat the oven

Preheat your oven to 350 °F (177 °C). This should take about 10-15 minutes.

Place the covered mold in a deep roasting pan 

Whatever pan you choose, it should have sides that are  5 inches (13 cm) tall. Lower your mold into the roasting pan. Line the roasting pan with a kitchen towel if you fear the mold might slip during steaming.

Pour water in the roasting pan 

Fill the roasting pan with 2 in (5.1 cm) of water, so that it is reaching halfway up the sides of the mold.

Bake the pudding 

Bake the pudding in the preheated oven for about 2 hours. Check for doneness by inserting a skewer in the enter of the pudding. If it comes out wet, bake the pudding for an additional 10-15 minutes.

Christmas pudding with citrus and pie recipe 


  • 175g each raisin, currants, and sultanas
  • 140g whole glacé cherry
  • 50g mixed peel
  • 50g whole blanched almond
  • zest 1 orange and 1 lemon
  • 1 medium carrot, peeled and finely grated
  • 150ml brandy
  • 50ml/2fl oz orange liqueur, such as Grand Marnier
  • 175g light muscovado sugar
  • 175g fresh white breadcrumb
  • 125g self-raising flour
  • 1 tsp mixed spice
  • ¼ tsp grated nutmeg
  • 175g butter, frozen
  • 2 eggs, beaten
  • butter, for greasing
  • holly sprig, to decorate


  1. In a large mixing bowl, soak the fruit, almonds, citrus zests, and the carrot in brandy and orange liqueur.
  1. Combine all the dry ingredients until homogenous. Then stir in the soaked fruit mixture. Whisk in the grated butter and eggs. Let all the family members take turns stirring and making a wish.
  1. Butter a 1.5-liter pudding basin and line with wax paper. Pack the pudding mixture into the pudding basin and make a well in the center of the mixture using the back of a spoon.
  1. Seal the basin with double-thickness greaseproof paper and foil. Secure the foil and greaseproof paper in place using kitchen ties. 
  1. Lower the pudding into a pan with an upturned saucer in the base. Pour water into the pan such that it comes halfway up the sides of the pudding basin. Steam-cook the pudding for about 6 hours. Maintain the water level in the pot during the steaming process.
  1. Steaming the pudding in the oven is a viable alternative cooking method. You simply have to place the pudding basin in a roasting tin filled with water. Then cover the tin with a large piece of pleated foil and cook for 6 hours at 160C/fan 140C/gas 3. Top up more water if needed.
  1. When the pudding has cooled down, store it in a cool, dark, and dry place for up to a year.
  1. Before serving, steam the pudding for about an hour. Serve with extra-thick double cream, orange custard cream, or vanilla ice cream, and enjoy. 

Steam Oven Christmas Pudding with Fig, Apricot, and Orange recipe 


  • 4.4 oz soft dried figs the ready-to-eat ones, chopped
  • 5.3 oz glace apricots candied apricots, chopped
  • 4.4 oz pitted soft prunes chopped
  • 4.4 oz sultanas
  • 4.4 oz dried cranberries
  • 1/4 cup brandy Cointreau or dry sherry
  • 2 oranges were zested and juiced
  • 1 cup fresh white breadcrumbs
  • 1/2 cup all-purpose flour plain flour
  • 2 tsp mixed spice
  • 1 tsp ground ginger
  • 1/2 cup macadamia nuts raw and unsalted, chopped
  • 1 cup dark brown sugar firmly packed
  • 3.5 oz unsalted butter softened
  • 2 eggs lightly beaten


  1. Soak the dried fruit and zest in alcohol and juice. Leave overnight for best results.
  1. Mix all the recipe ingredients in a large bowl. Then stir in the soaked fruit. Pack the pudding mixture into a 1.2 liter greased and parchment-lined ceramic pudding bowl. Cover the bowl with a pleated piece of silicon baking paper. Secure it in place using a kitchen tie.
  1. Cook the pudding for 6 hours in a steam oven at 212⁰F/100⁰C (steam only, humidity 100%). During the steaming process, top-up more water if needed.
  1. Once cooked, let the pudding cool and refrigerate for up to 4 weeks.
  1. Before serving, steam the pudding for 1 ½ hour using the same method. 
  1. Top off with ice cream or serve with custard and enjoy.
