Flourless fried chicken


  • 5-6 pieces of chicken thighs
  • Salt to taste
  • Pepper to taste
  • Oil for frying


  • Dry the pieces of chicken with dry paper towels.  
  • If the chicken contains bones, remove them and keep them aside for preparing broth or stocks.
  • In medium heat, place a cast-iron skillet. Season the chicken with pepper, paprika, garlic powder, and salt.
  • You can put small pieces of chicken into the pot to determine whether the oil is hot. If the oil sizzles, you can start putting the chicken into the oil.
  • Place the chicken pieces into the skillet one at a time.
  • Fry the chicken for 10-15 minutes till it has a golden brown color and becomes crispier in texture. 

Using a meat thermometer, insert it on the thickest part of the chicken and determine its internal temperature. The internal temperature should be 165℉.

  • Remove the chicken pieces using a slotted spoon and drain them on a dry paper towel. Repeat the same process of frying with the other chicken pieces and overcrowding the pan as this would affect the doneness of the chicken.

Pork chops (Pan-fried)


  • 3-4 boneless pork chops
  • 1 cup cornstarch
  • 1 cup buttermilk
  • 1 garlic clove
  • 1 tbsp Dijon mustard
  • 2 cups corn flakes
  • Salt to taste
  • Pepper to taste
  • 3 tsp lemon juice
  • Vegetable oil for frying


  • Using a food processor or blender, crush the corn flakes. In a bowl, add the corn starch, pepper, and salt. Mix well.
  • In another bowl, mix garlic, buttermilk, and mustard.
  • Dry the pork chops using a dry paper towel. Slit the pork chops ½ an inch using a knife. 
  • Roll the pork chops in the corn starch first followed by the buttermilk mixture. Finally, roll them into the crushed corn flakes. Keep it aside for 10 minutes.
  • In a non-stick or iron skillet, add the vegetable oil. Let the oil become a bit hot before adding the pork chop pieces onto the pan.
  • After the oil turns hot, gradually add the pork chop pieces. Flip the chops and let the other side cook as well. Cook the pork chops till it reaches an internal temperature of 140℉. 
  • Drain the pork chops in a dry paper towel to remove the excess oil. Serve.

What are some tips to keep in mind while frying without flour?

  • If the coating is falling off while frying the food without flour, it is possible that you might be flipping the food too often. Avoid doing so.
  • Avoid overcrowding the pan while frying. This would remove the coating of the food and the food is not likely to cook properly.
  • If you find the food pieces sticking to each other, fry the food pieces in batches. This could be observed especially while frying the chicken pieces.
  • After coating the food in breadcrumbs, corn starch, or any other dry coating, shake the food a little bit so that the extra coating stuck to the food comes off into the plate and is not wasted.
  • There is another method to coat the foods rather than the usual method of rolling or dipping them. It is called the shake and bake method.

In this method, a small bag is filled with the coating, and the food pieces are put inside the bag containing the coating and shaken.

For instance, if you want to fry chicken pieces, the small bag would contain corn starch and crushed cereal as a coating. The chicken pieces are put inside the small bag and the bag is shaken. This would help in coating the chicken pieces. 

  • Use vegetable oils for frying as the vegetable oils have a higher smoke point than unrefined or virgin olive oils.
  • It would be easier to crush the cereal flakes in a blender and use them as a coating than creating bread crumbs for coating.
  • If you want to fry chicken pieces using bread crumbs, you can coat them initially in egg mixture and then coat them in bread crumbs. This would prevent the bread crumbs from falling off.
