  1. Remove the pan from the heat and let it sit covered for about 30 seconds for a runny yolk, 60 seconds for a soft thickened yolk, or 2 minutes for a medium set, richer yolk.

  1. Heat butter/oil in a 5 to 8-inch nonstick or cast-iron skillet on medium flame. Swirl it around the pan to grease it evenly.
  1. Pour the cracked eggs into the heated pan and sprinkle them with some salt. Do not move the egg and let the egg cook for 2 minutes until the egg white begins to set and the surface is translucent. 
  1. Using a spatula, flip the egg and cook the other side for 10-15 seconds until the egg white is set and the yolk is still runny.

Over-Medium eggs 

  1. Add butter or oil in a 5 to 8-inch nonstick or cast-iron skillet and let it heat up on the medium flame. Swirl it around the pan to grease it evenly.
  1. Pour the cracked eggs into the heated pan and sprinkle them with some salt. Do not move the egg and let the egg cook for about 2 minutes until the egg white begins to set and the surface is translucent. 
  1. Flip the eggs using a spatula just until the yolks are creamy from the center. This will take about 1-2 minutes.
  1. Season with salt and pepper. Serve warm and enjoy.

Over-Hard eggs 

  1. Add butter or oil in a 5 to 8-inch nonstick or cast-iron skillet and let it heat up on the medium flame. Swirl it around the pan to grease it evenly.
  1. Pour the cracked eggs into the heated pan and sprinkle them with some salt. Do not move the egg and let the egg cook for 2 minutes until the egg white begins to set and the surface is translucent. 
  1. Flip the eggs using a spatula and reduce the heat from medium to low. Let the eggs cook for about 3-4 minutes or until the egg whites are opaque and the yolks are firmly set.
