  • Wash approximately 250 g of potatoes with running water
  • Peel and cut the potatoes into equally small pieces (optional)
  • Place the potatoes in a large microwave-safe cooking dish with 500 mL of water or enough water to cover the potatoes and cover the dish and put it in the microwave oven
  • Cook at high power for about 5 minutes or enough time to bring to boil
  • Turn the power to medium level and cook for additional 10 to 15 minutes or for time enough to soften the potatoes
  • Let the potatoes rest for 3 to 5 minutes before removing them from the water

Cooking potatoes in the microwave will save time. To cook potatoes in the microwave without water, follow the instructions (adapted from 1 and 2):

  • Wash approximately 250 g of potatoes with running water
  • Peel and cut the potatoes into equally small pieces (optional)
  • Puncture the potatoes with a fork to allow the by heat produced stem to escape during cooking
  • Place the potatoes in a microwave-safe cooking dish
  • Cook at high power for about 6 minutes or for enough time till the potatoes are soft, halting and turning them over the halfway

What is the best method to cook potatoes? 

The best method to cook potatoes is by using sous vide, according to studies, when considering the effect of cooking on folate content. However, the effect of this cooking method was not reported regarding the losses of antioxidants or vitamin C (3).

Sous vide is a cooking method where food is vacuum-packed before cooking at controlled temperatures.

By comparing different cooking methods, scientists showed that there was no reduction in the amount of folate in potatoes by cooking them using sous vide, while there was 82% of retention of this vitamin when potatoes were boiled in water (3).

On the other hand, when comparing the effect of cooking on the antioxidant property of potatoes, microwave cooking was the best method. The amount of antioxidants after cooking potatoes in the microwave was 16.1 mg / g dry matter, which means it could increase the antioxidants in potatoes (1).

The amount of antioxidants in raw potatoes was 15.1 mg / g dry matter, while when cooked boiling was 13.7 mg and by pressure-cooking was 14.7 mg.

The vitamin C retention in potatoes after boiling was 43% compared to raw potatoes. Due to the high solubility and low heat stability of vitamin C, all cooking methods reduce the amount of vitamin C drastically (1).

Should you peel the potatoes before cooking?

Yes, you should peel the potatoes before cooking them. Peeling potatoes do not affect the retention of folate after boiling them, as reported in studies (1). 

Although there was a common belief that cooking potatoes with skin was more nutritious, it is not recommended to do so (4). Potatoes contain glycoalkaloids, which are plant metabolites produced by vegetables of the Solanaceae family.

These chemicals can be toxic when ingested in high quantities and may cause vomiting, diarrhoea, stomach cramps, headache, and fever and lead to hallucinations, coma and even death.

Glycoalkaloids cause bitterness in potatoes and are more concentrated in the “eyes”, peel and in sprouting potatoes, as well as in the green parts of the tubers. Improper storage of tubers, such as exposure to light and high temperatures can lead to the increase of glycoalkaloids in their composition.

Peeling the potatoes before cooking can effectively reduce the concentration of glycoalkaloids in the tubers and improve the safety of cooking and eating (4).
