  • 2 tablespoons fresh chopped herbs

Directions 

  1. Place a pot with a tight-fitting lid on the stovetop. Over medium-high heat, add the oil and potatoes to the pot. Mix well until the potatoes are well-coated in oil.
  1. Stir in the stock and salt. Then tightly close the pot with the lid and reduce the heat to medium-low.

  1. Then stir in the butter and herbs.

To make this recipe vegan, use vegan butter or more olive oil. For a vegetarian twist to this recipe, replace the chicken stock with the veggie stock.
