How long does pasta sauce last in the fridge?

Once opened, pasta sauce will last 3 to 5 days in the fridge. If not, we can have it stored in our pantry for up to 6 months. Contrary to what many might think, open pasta sauce can only last five hours outside the refrigerator.  It is preferable to cover what is leftover with a layer of olive oil. It can be frozen for two months. If it is tomato without frying, it should not be more than a couple of months in the pantry. 

It is better to cook the sauce or at least roast some vegetables to make it taste better. If you use dried chilies, you have to soak them in boiling water for 15 minutes to soften them.

On the other hand, if you fry the sauce it will have a more smoky flavor, but definitely, the more you cook it, the more days it will likely take to spoil. For example, there are some sauces where the ingredients are first roasted or fried and then cooked. After these processes, the microorganisms that can cause the vegetables to rot are eliminated.

Can old pasta sauce make you sick?

Old pasta sauce can make you sick if it is moldy or has not been stored properly and has developed bacteria harmful to the human body. The important thing is never to wait more than two or three days to consume the sauce, and of course, taste it before using it to season pasta.

Generally, pasta sauces kept in a jar can stay in the pantry even for up to 1 year and a half (unopened), and in the refrigerator no more than 4 days (opened). It can also be frozen for two months. If the sauce is made from tomatoes without frying, it should not be more than a couple of months in the pantry (unopened).

As almost always, common sense gives us the solution when it comes to knowing whether to store sauces in the refrigerator or kitchen cabinets. Those with a high salt concentration are fermented, are very vinegary, and can be kept out of the fridge. Although experts warn, you have to be careful if you opt for healthy ones with less salt content.

Pasta sauces with perishable ingredients, such as eggs, dairy, fruits, and vegetables, are better cold and have a shorter shelf life. In any case, it must be borne in mind that no matter how well preserved they are, the sauces are not eternal, and it is advisable from time to time to review and discard those that have been left behind, either in the refrigerator or in the pantry.

As a general rule, practically none of the sauces that are purchased prepackaged require a refrigerator before opening. But when in doubt, you just have to look at where they were in the store and do the same. It is also a good idea to check if the label advises something in this regard.

When it comes to condiments made from perishable foods, such as fruits, eggs, or milk, they have to be kept cold once opened but also their duration, which is usually shorter, must also be taken into account.

If a mayonnaise or a tartar sauce is homemade, you have to directly dispose of what is left over, just as it happens with those made from milk, cream, or yogurt. 

Something that should never be done is to spread anything that will accompany the sauce directly on the pot or put the cutlery that is being used because they could contaminate the sauces. Nor, of course, add the sauce that has not been used and that has been in contact with other foods. 

How do I freeze leftover pasta sauce?

You don’t need to make a sauce from scratch every time. You can certainly make a batch in advance and then freeze it for later. Still, you can’t go wrong with a sauce that separates in the freezer. 

To freeze, start with a freshly made pasta sauce. Allow cooling completely before freezing to avoid freezer burn. Scoop the desired amount of sauce into a freezer bag, leaving some room for expansion. Seal the bag tightly. 

Then, slide the freezer bag into another one and seal the second bag tightly. Label and date the freezer bag and place it in the freezer. This is also a great way to protect against leaks!
