What is condensed milk?

Condensed milk is a milk product that is prepared by removing about 60% of the water from dairy milk. For this, milk is heated at about 85-90°C temperature. Sucrose is added to milk till approximately half the ratio of sugar to milk is achieved. Sucrose acts as a preservative by increasing the osmotic pressure of the fluid, thus, preventing microbial growth.

Uses of condensed milk

Condensed milk is a staple ingredient of some desserts, some of which are described below.

Coconut Flan

Condensed milk is used along with coconut milk to make coconut flan. With a hint of cinnamon, vanilla, and nutmeg, this dessert is an absolute delight.

Key lime pie

This pie has a crunchy graham cracker base and is topped with condensed milk flavored with lemon or lime zest, juice, and fused with egg yolks. Play around with the crust and do not hesitate to experiment with a cookie dough base.

Coffee ice pops

The popsicle is made of a rich amalgam of cream and condensed milk and is drenched in coffee to give a caffeine boost.

Tres leches cake

A plain vanilla sponge is poked with a small skewer to make holes and a mixture of condensed milk and regular or coconut milk is poured onto the cake. When the milk is absorbed fully, it is topped off with caramel or whipped cream.

Brigadeiro

These are small orbs of condensed milk that are coated with unsweetened cocoa powder and rolled onto desiccated coconut or chocolate or colorful sprinkles.

Chocolate chips with 70% cocoa combined with marshmallows and peanut butter for a salty hint make for a perfect treat for fudge lovers.

How to make condensed milk at home?

With evaporated milk

You will need the following ingredients to make condensed milk from evaporated milk.

  • 1 ½ cup or 300 grams-white granulated sugar
  • 12 ounces can of evaporated milk

Follow the procedure given below:

  1. Pour the evaporated milk and sugar into a pot or saucepan.
  2. Bring the liquid to a boil while stirring continuously.
  3. Keep an eye on the color and consistency. When the liquid develops a pale yellow color and a rich creamy consistency, turn off the flame.
  4. Let it cool at room temperature.
  5. Store in the refrigerator in a sterilized container.

With fresh milk

If you do not have evaporated milk, worry not, use whole milk to make sweetened condensed milk for your desserts. Make sure you have the following ingredients in stock.

  • 100 grams granulated sugar
  • 2 Tbsp or 28.4g unsalted butter
  • 1 ½ cup full-fat milk
  • Vanilla essence

Follow the procedure given below:

  1. Pour the milk into a pot or a saucepan and add sugar.
  2. Cook on low heat until the volume of milk is reduced to half and it develops a pale yellow color and a creamy consistency.
  3. Melt butter into the liquid. Add vanilla essence for flavor.
  4. Let it cool.
  5. Store in a sterilized container and refrigerate.

With milk powder

  • 1/2 cup boiling water
  • 68g fat-free powdered milk
  • 134 grams of sugar
  • 3 tablespoons melted butter
  • Vanilla essence(optional)

Follow the procedure below:

  1. Add all the ingredients to a blender and blend on full speed until smooth.
  2. Store in a sterilized container in the refrigerator.

Instead of dairy-based milk powder, non-dairy milk powders can also be used like soya milk powder, rice milk powder, potato milk powder, coconut milk powder, and cashew powder, etc.

Vegan condensed milk

3 cups of plant-based milk

600 grams of White Sugar

3 tbsp or 22g Cornflour

  1. Add your milk(soya milk, almond milk, or oat milk) into a pot or a saucepan
  2. Add sugar and cook on low flame until the milk changes color.
  3. Liquify cornstarch by adding water to it. Whisk well to dissolve lumps.
  4. Add the cornstarch into milk and stir.
  5. Turn off the flame and whisk the milk until smooth.
  6. Store in a sterilized container in the refrigerator.

Sugar-free condensed milk

3 tsp butter melted

 ⅔ cups Sugar alternative 

1/3 cup Boiling Water 

1 Cup Milk Powder

  1. In a bowl, whip all the ingredients until smooth and creamy.
  2. Store in a sterilized container and refrigerate.
