Remove the pit with the help of or without the use of a knife. You can now slice or even cut it up because the skin is edible and does not need to be removed. 

You can, however, remove the skin if you’re using fresh plums or if you don’t like it. Put the plums in boiling water for 15 seconds to properly remove the skin. After that, immediately immerse them in cold water. You can also use it for cooking purposes.

How long do they last in general?

Plums ripen very quickly and become sweet and juicy in the same amount of time. If left unrefrigerated, plums purchased fresh will be at their high point in two days. You can add an extra day if the plums were green when you purchase them.

How long do pickled plums last?

Pickled plums can last for years, whether they’re Umeboshi or pickled plums in the western style with vinegar and spices. That is, assuming they have been properly processed.

Umeboshi that is sold commercially is generally safe.  If you’re going to form a plums pickle at home, sterilize all the tools and use a canner to adequately heat seal your jars.  Pickled plums can last on the shelf from five to thirty years if care is taken.
