  • 6 eggs

Instructions 

  1. Place eggs in a large saucepan. Add enough water to submerge all the eggs such that there is 1 ½ inch of water above the eggs. Bring the water to a boil. Then turn the heat low, cover the saucepan and cook for a minute or so. 
  2. Remove the eggs from heat and remove the lid. Leave them to sit for about 14 minutes. After 14 minutes, rinse the eggs under cold water thoroughly for at least a minute to halt the cooking process.
  3. Crack the eggs by tipping them on the edge of a bowl and peel the eggs under running water. Pat dry the eggs using paper towels.
  4. Cut the eggs into halves lengthwise. Transfer the egg yolks to a bowl and place the egg whites on a plate. 
  5. Whisk and mash the egg yolks into a smooth consistency. Add mayonnaise, vinegar, mustard, salt, and pepper and whisk until mixed completely.
  6. Place a heaping teaspoon of egg yolk mixture onto the egg whites. Sprinkle some paprika on top and serve.

Broccoli and cheese
