  • Double the recipe – For example, if you made an Italian sauce and went overboard, it is an excellent option to add twice as many tomatoes and vegetables (if your sauce contains them). Remember that you must cook the tomatoes, blend them again, and add them in the sauce. Bring to a boil, correct the seasoning, and serve.

If the chili you made is too sweet for your taste, you have to balance the flavors.  The excessive sweetness of a dish can be recovered thanks to a skillful balance of flavors. Those capable of counteracting the sweet, in addition to the savory given by the salt, are nearly three: acid, bitter, and spicy. 

As for the acid, the options are different, and among these, you can choose from the “evergreen” lemon juice to vinegar, be it white wine, red wine, or apple. No balsamic, though! It would only make the situation worse. Even in the case of amaro, the choice is vast but not trivial. 

Among the best bitter ingredients that can be used there are cabbage, rocket, and radicchio. But for more effective action, you can also opt for unsweetened cocoa powder. A simple recipe for homemade chili sauce

The ingredients you will need to make 180 ml of chili sauce:

  • 50 g. palm sugar (1 block)
  • 50 g. white sugar (1/3 cup)
  • 100 ml. rice vinegar
  • 100 ml. water (1/2 cup)
  • 5 g. salt (1 tsp)
  • Two red hot peppers (20 g.)
  • 10 g. regular red pepper (optional to substitute for a hot red pepper)
  • Two cloves of garlic (10 g.)

Step 1 –  In a mortar, we crush the garlic and red peppers well, we reserve them for later. 

Step 2 – In a saucepan over medium heat, we put the water, sugar, rice vinegar, salt, and stir well until everything dissolves.

Step 3 – Then we add the garlic and the peppers, stir it and bring it to a boil.

Step 4 – At this point, we turn off the fire, move it, and let it cool completely; we can see how our sauce thickens as it cools.

Step 5 – We put it in a glass jar and close it very well. It can be kept in the fridge for a week and used to accompany our favorite dishes.
