There are a few ways to fix tangy chili:

  • Incorporate vegetables: some vegetables rich in sugars such as potatoes, carrots, and in general, any vegetable, which, due to its starch content, helps to balance the excess of spiciness.
  • Add some sweetener: a little granulated sugar, honey, syrup, and even ketchup if your recipe needs to reduce the heat.
  • Add broth: If a broth (chicken, beef, fish, or vegetables) has been used as a base in your recipe, you can remedy it with an extra portion of this liquid to dilute the exuberance of chili.
  • Add dairy: Balance the spiciness, if your stew allows it, adding a little dairy or vinegar. You can incorporate milk, Greek yogurt, cream, butter, or coconut milk. 
  • Use lemon – If the damage is not very serious, you can add a few drops of lemon so that the acidity helps balance the flavors. Even the peel can sometimes help.
  • Double the recipe – For example, if you made an Italian sauce and went overboard, it is an excellent option to add twice as many tomatoes and vegetables (if your sauce contains them). Remember that you must cook the tomatoes, blend them again, and add them in the sauce. Bring to a boil, correct the seasoning, and serve.

How do you fix sweet chili?

If the chili you made is too sweet for your taste, you have to balance the flavors.  The excessive sweetness of a dish can be recovered thanks to a skillful balance of flavors. Those capable of counteracting the sweet, in addition to the savory given by the salt, are nearly three: acid, bitter, and spicy. 

As for the acid, the options are different, and among these, you can choose from the “evergreen” lemon juice to vinegar, be it white wine, red wine, or apple. No balsamic, though! It would only make the situation worse. Even in the case of amaro, the choice is vast but not trivial. 

Among the best bitter ingredients that can be used there are cabbage, rocket, and radicchio. But for more effective action, you can also opt for unsweetened cocoa powder. However, with the spicy, the options increase even more; the important thing is not to be intimidated by the intense flavors. An excellent hot pepper could do the magic; seeing is believing!

Another option is to dilute to save a dish that is too sweet. 

A spoonful of sugar in a coffee cup makes the drink sweeter, in 10 liters, it makes no difference! This is the principle behind it. Sweetness, like any other flavor, is not an absolute value, but they stand out – or not – depending on their concentration relative to the other ingredients. This means that if the dish you have prepared is too sweet, if possible, you just have to double the ingredients. From a soup for two, for example, it is transformed into a soup for four. 

It is not always possible, but where it is, it can be an excellent solution. The alternative, similar in the basic concept, is to eliminate half of the preparation – if what you are preparing and the degree of cooking allow it – and replace it with the correct balance of flavors.

A simple recipe for homemade chili sauce

The ingredients you will need to make 180 ml of chili sauce:

  • 50 g. palm sugar (1 block)
  • 50 g. white sugar (1/3 cup)
  • 100 ml. rice vinegar
  • 100 ml. water (1/2 cup)
  • 5 g. salt (1 tsp)
  • Two red hot peppers (20 g.)
  • 10 g. regular red pepper (optional to substitute for a hot red pepper)
  • Two cloves of garlic (10 g.)

Step 1 –  In a mortar, we crush the garlic and red peppers well, we reserve them for later. 

Step 2 – In a saucepan over medium heat, we put the water, sugar, rice vinegar, salt, and stir well until everything dissolves.

Step 3 – Then we add the garlic and the peppers, stir it and bring it to a boil.

Step 4 – At this point, we turn off the fire, move it, and let it cool completely; we can see how our sauce thickens as it cools.

Step 5 – We put it in a glass jar and close it very well. It can be kept in the fridge for a week and used to accompany our favorite dishes.
