You can keep it frozen for at least three years without fear of quality degradation. Dates that have been thawed at room temperature have a flavour that is almost comparable to dates that have been freshly opened.
If you wish to freeze dates that have been in the fridge for a long time, you must remove them from their original packaging and place them in an airtight container.
When you’ve decided to defrost dates, remove them from the freezer a few hours before you plan to use them. If you’re in a rush, place dates in a bowl of hot water to speed up the defrosting process. In approximately half an hour, they’ll be ready to use.
Never thaw frozen dates in the microwave. Otherwise, dates’ texture will be destroyed by quick thawing at high temperatures.

- In a pan, dry roast all of the chopped nuts for 30 seconds on medium heat, or until lightly browned. Roast for a few more seconds after adding the sesame seeds. Place the nuts in a basin and set them aside.
- Add butter and chopped dates to the same pan. Cook for 2 minutes on low heat, or until soft, stirring constantly with a spatula. Cook for another minute after adding the raisin, toasted nuts, and cardamom powder to the dates. Remove the pan from the heat.
- Allow the mixture to cool to the point where it can be handled. Then, with your hands, mix some more (if needed).
- Place the dates mixture on a piece of cling wrap and roll it into a log. Keep the log refrigerated and cut date slices as needed. Allow cooling before serving.
