The basin should be covered in parchment and foil to prevent the water from getting into your pudding. Moreover, there should be a pleat in your lid so that the pudding has enough space to rise.

Place 3 lit tealights alongside the pudding. Turn off the rest of the lights in the room. Half-fill a large metal ladle with a 40% or more alcohol spirit, such as brandy, rum, or whisky.

Bring the ladle over the tealights and heat until the liquid inside gets a little bubbly on around the edges. Tilt the ladle to allow the alcohol to get lit from one of the flames. 

When the alcohol catches the flame, restore the original position of the ladle and tip the flaming booze over the pudding while the crowd cheers.
