Can you use expired yeast?

You can use both fresh and dry baker’s yeast if they are expired, but they will have lost much of their strength. Bread doughs could take much longer to rise, even without ever reaching their peak. It is advisable to add a larger quantity than normal. The fresh one should be discarded if more than two weeks have passed, and the dry one, after three or four months, a little more if it has been stored in the refrigerator.

A distinction must be made between baker’s yeast (live microorganisms) and powdered chemical boosters. The first, in a fresh format, has a much shorter life and must be kept refrigerated; usually, it does not exceed one month. It can be frozen if the best before date has not passed.

Chemical boosters have a longer shelf life and take longer to deteriorate. We can use both expired, considering that they will also lose strength with the passage of time. It depends a lot on the brand and it is better to be safe: if more than five or six months have passed from the recommended date, we can check its potency by following the method below.

How to know if yeast is still good

The first thing to do to check the effectiveness of yeast is to look at its expiration date. In most cases, when its deadline has not yet been reached, yeast can be used normally. In the same way, we have to be aware that there are factors such as humidity or the place where we store it, which can affect the date indicated.

In the event that you have yeast stored in your home but do not know its expiration date, there is a test that tells you whether or not it is still useful to prepare your recipes. The test itself is very simple since you only need the yeast itself, warm water, and some type of sweetener to put it into practice.

In half a cup of warm water, we must mix a whole envelope of yeast with a teaspoon of sweeteners, such as honey or sugar. Once we have added these ingredients to the water, we simply have to wait between 5 and 10 minutes. After this time, we can only check the state of the mixture, since if we observe foam and bubbles in it, we will confirm that the yeast is still useful for cooking.

Yeast is one of the most important ingredients in the world of baking. Already in Ancient Egypt, it was used for the fermentation process of different recipes. Although we almost always associate it with making bread, there are other products that also have yeast, such as beer, wine, or soy sauce.

Although in general the recipes we make in our day to day do not require yeast, it is not strange to find this ingredient at home. It may be that at some point we would have needed it to make some type of dessert and that now it is still in our pantry waiting to be used again. Although this is quite logical, it can also be a problem, since being an ingredient that we use so rarely, it may happen that we do not remember how long we bought it and if it is still useful for cooking.

Expiration date vs Best before date

Among the mandatory information that almost all food products must include on the label, we find the expiration or preferred consumption date. They are regulated by the United States Department of Agriculture, Food Safety and Inspection Service, and it sets the minimum duration of a product in which it is guaranteed that it maintains all its organoleptic properties without losing quality or posing a health risk.

Expiration date. It applies to the most perishable foods, usually fresh or semi-preserved, which usually need refrigeration. They have a shorter shelf life and are more sensitive to poor preservation. Consuming them after the date implies a potential risk of poisoning, more or less serious depending on the food and the time that passes. Fresh meat and fish are the most obvious examples.

Best before date. In this case, it is indicated that the product is still safe and edible even after the date, but the manufacturer can no longer guarantee that it maintains the same quality. Depending on the food, in principle, you can enjoy the same properties even after several days or weeks. The clearest example is yogurt and other pasteurized dairy, or dry ingredients.

Sometimes it is left to the producer to choose to show one or another date, such as yogurts, or both can be included. There is no legal regulation that establishes the expiration of the different foods: it is the responsibility of the manufacturer or distributor, based on different studies by expert teams.

Not all foods are required to include these dates. In addition to fresh unprocessed fruits and vegetables, or alcoholic beverages and bakery and pastry products for immediate consumption, salt and sugar are two very clear examples. But that does not mean that they can have an indefinite useful life; they can also be spoiled.
