The toffee only needs to be cooked long enough to harden. Please keep in mind that this is not a hard toffee. It’s solid on the outside, but when you bite into it, it has a mushy, sweet texture.

To make Christmas Crack, follow these steps:

  • Preheat the oven to 350 degrees Fahrenheit. Heavy-duty aluminium foil should be used to line a big baking pan. To box in the saltine crackers, spread them out in a single layer and fold up the foil’s edges. Remove from the equation.
  • Melt the butter and brown sugar in a medium saucepan over medium heat on the stovetop. Bring to a boil, then reduce to medium-low heat and continue to simmer, stirring regularly, for exactly 5 minutes.
  • Pour the sauce over the crackers quickly and evenly.
  • Bake for 5 minutes (minimum) or until bubbling in the oven. The crackers will expand and move around a little as they bake.
  • Remove the pan from the oven and immediately cover with chocolate chips. Allow it sit for 1-2 minutes, or until roughly half of the chocolate chips have a shiny appearance.
  • It’s soft enough to start spreading the chocolate over the toffee once it starts to look shiny.
  • If desired, sprinkle with extra toppings and set in the refrigerator for about 2 hours to solidify the candy.
  • Remove the foil once it has set. Hand-break the candy or cut it into pieces with a sharp knife.

Expert advice: 

  • For this dish, a 1015′′ jelly roll pan works best. Any baking sheet this size or larger will work, though. Because my pan is 1117′′ in diameter, I just fold up the foil sides to hold the crackers in place and prevent the toffee from leaking out into the pan.
  • Heavy-duty foil works best for lining the pan because it is easier to rip away. Regular foil can be used if you lightly treat it with nonstick cooking spray to make it easier to remove. Alternatively, parchment paper can be used. If you’re using parchment paper, there’s no need to grease it; just make sure it completely covers the bottom and sides of the pan.
  • Toffee is being prepared. Set a timer for 5 minutes once the butter and brown sugar have come to a boil. It should be at a rolling boil to evaporate part of the moisture and turn into caramel.
  • Making the cracker candy in the oven. In a 350°F oven, bake the saltine toffee for at least 5 minutes, or until bubbling, until the toffee reaches its second boiling point and absorbs into the crackers.
  • The chocolate chips are being melted. Sprinkle the chocolate chips on top as soon as the tray is removed from the oven. To melt the chocolate, the bubbling toffee should be hot enough. 

You can start spreading the chocolate to cover the saltine toffee once roughly half of the chocolate chips are glossy. If you’re having problems, use small chocolate chips or melt the chocolate in the microwave before spreading it on top.
