  • About 100g of diced rabbit
  • About 80 grams of mixed celery, some carrots and some chopped up onions.
  • 30 grams of spinach
  • 2 tablespoons fresh ricotta cheese
  • One egg
  • 20  grams of grated parmesan cheese
  • Nutmeg, freshly grated
  • Some salt and pepper

First you will need to make the filling. Preheat the olive oil in a large pan, then add the diced meats and vegetables with the exception of spinach or chard and fry, stirring, until the meats are evenly browned. 

Put the heat on LOW and continue to cook, stirring occasionally, until the meat is almost cooked. This should take about 45 minutes. In the meantime, use a little water to cook up your veggies .i.e the spinach until it’s tender then discard any excess water 

Proceed to mince or finely chop and add to the meat. Continue stirring until the mixture is dry enough.  Mince your meat and add the egg, grated parmesan, ricotta, and nutmeg. Now mix  well and add in the salt and pepper for the seasoning to add some taste.

Now it’s a good time to roll out the pasta into just 2 long sheets and cut into some wide strips about four to five centimeters wide. Place some small balls of filling at 2cm intervals in the middle of each strip. Brush the edges with a little water, then seal off the long edges. 

After the stock has sufficiently boiled, put the pasta in it and add a few drops of oil. Cook for 6–7 minutes, until a little more than al dente, then drain. You can serve your meal without sauce.
