  • Wash the eggs prior to using them
  • Wash hands with soap and running water as well as all utensils to be used in cooking
  • Avoid handling other foods while preparing the lemon curd – avoid handling meats and fresh vegetables to prevent cross-contamination
  • Cook the lemon curd to a minimum temperature of 165°F (75°C)
  • Do not leave the cooked lemon curd out of the refrigerator for more than 2 hours
  • Store the lemon curd in the refrigerator and consume it within 3 to 4 days
