Here is a recipe for mac and cheese with huitlacoche for you to enjoy when pregnant

  • One cup of chopped huitlacoche
  • 60 ml butter
  • ¼ cup flour
  • 2 cups grated cheddar cheese
  • 2 cups grated gouda
  • 3 cups milk 
  • Bay leaf
  • Salt, as wanted
  • Pepper, as wanted
  • 2 cups corn kernels
  • 1 sweet onion, chopped
  • 2 garlic cloves, chopped
  • 340 grams of macaroni pasta 

Chop huitlacoche while you cook pasta. Once pasta is fully cooked pour it into a bowl. 

In a large saute pan use the butter and heat into it bubbles. Add the flour, and stir until completely mixed. Then, add the milk, bay leaf, salt, and pepper and let it simmer for about 10 minutes.

Add the cheese and stir until completely melted. Then, add the corn kernels. 

In a different saute pan, caramelize onion and garlic, and then add to the cheese mixture. Add the pasta and the huitlacoche at the end and mix. 

Put in the oven for about 15 minutes at 350 F.
