After removing catfish fillets from the refrigerator these are removed from the milk and are sprinkled with salt. After pouring oil it is heated and fried in batches.

  • Catfish head stew: Oil is added in a cast iron pot. Onion, celery, and bell peppers are added and sauté until the onions turn translucent. After lowering the heat, it is seasoned with salt, white pepper, cayenne, red pepper flakes, and sugar.

After lifting the lid, it is made sure that the catfish is tender and is cooked for 10 to 15 minutes. Sample the sauce and seasoning are adjusted according to our taste. It is served in a bowl over cooked white rice and garnished with green onion tops.

  • Catfish cakes: After placing catfish in a saucepan containing enough water, it is boiled. Fish is mashed up and water is drained. After boiling, fish is stirred in the onion, mustard, salad dressing, cracker crumbs, and egg. These are mixed and blended evenly. 

After heating the oil in a large heavy skillet, fish mixture patties are made and medium heat is used to boil this. Drain on paper towels, and serve hot.
