  • Homemade Dolma: For this recipe, rice is rinsed well so that starch is removed. Grape leaves are rolled tightly so that they may not be undone during cooking. Pan is lined with grape leaves before the dolma is cooked.  

While cooking an inverted plate must be placed on the top of assembled grape leaves so that they may remain covered in water. Before a few minutes of serving, the dolma is cooked so that liquid gets absorbed.

  • Stuffed grape leaves: To make stuffed grape leaves, rice, onion, dill, and mint is sautéed over medium heat for five minutes. Heat is lowered after adding one-quarter of broth. After stirring it in lemon juice, heat is removed. 

After folding both sides of the leaf towards the centre, roll up from the broad bottom to the top, and place into a 4-quart pot. The remaining lemon juice is used to sprinkle over it.

  • Lebanese Stuffed Grape Leaves: After removing the thick stem from the middle of the leaves, these are boiled to soften them. By using a large teaspoon per leaf, it is spread out into a thin line across the centre of the leaf. 

These are rolled tightly so that it does not unravel while cooking. These are allowed to rest for half an hour in the pot to absorb any remaining liquid and set.
