Why do garfish have green bones?

Some people refrain from eating garfish due to its greenish-blue bone colour. People assume the fish is diseased or poisonous because of the colour. The presence of greenish-blue colour is because of Biliverdin.

Biliverdin is a type of pigment that arises from the breakdown of “heme” [ precursor to haemoglobin] of haemoglobin in the red blood cells. The greenish-blue colour can appear on our body when we are badly bruised.

However, the presence of this different shade does not mean the garfish is not safe to consume.

Why don’t more people eat gar?

Most people do not eat the garfish because of the presence of greenish-blue coloured bones, but as mentioned earlier the presence of the colour does not make the fish poisonous to eat. The garfish is also notably hard to clean because it has a rough scale and exterior skin.

The garfish is also hard to catch because they have a hard and narrow bony mouth, their bodies are slender but firm. Most people do not like to eat garfish because they do not consider them high-quality fish.

Are garfish aggressive?

No, garfish are not aggressive towards humans. Even though they look fierce there are no known attacks on humans. But you need to be careful while handling them in the boat as they can cause you injury by biting you with their sharp teeth.
