  • Grip a corner of the fish skin between thumb and forefinger and peel it away. It will peel away in one piece. You can use the end of a knife to help loosen the tab of skin if required.
  • Slide the spatula under the fish and gently turn it over skinned-side down on a clean serving plate. Fish is garnished with fresh herbs and lemon juice if desired.
