You’ll need the following ingredients 

  • 300 grams of brussel sprout leaves washed and dried
  • 300 grams cooking chorizo 
  • 6 large potatoes, peeled and cut into small chunks
  •  
  • 1.2 litres of chicken or vegetable stock 
  • 2 large onions, peeled and thinly sliced 
  • 2 bay leaves
  • 4 garlic cloves, peeled and minced 
  • 2 tablespoons of olive oil 

Recipe 

  • Take a heavy-based pan that is also large in size, add half of the oil, heat it on medium heat and add the chorizo. Cook until it lets out a good amount of rich, red fat. With the help of a slotted spoon, take the cooked chorizo out of the pan. 
  • Add the onions to the same pan and let them soften for about 7 minutes.
  • Add garlic and cook again for a few minutes, and then add potatoes. Stir the potatoes properly so that they’re mixed well with garlic, onions, and chorizo oil. 
  • Add the chorizo back to the pan and add the vegetable or chicken stock. Bring it to a boil and let it simmer until the potato is cooked. 
  • While the stock is getting cooked, dry the brussel sprout leaves, and whizz them in a food processor, until they look like confetti. 
  • Once the potatoes are cooked, mash some of them so that the soup is thickened. Add the seasonings in the soup to your taste. 
  • Now it’s time to add the brussel sprout leaves. Add them and let the soup simmer for 3 minutes until the leaves are cooked.
  • Add seasonings again if you feel there is a need to. Drizzle the soup with some olive oil before serving.
