Some methods of cooking beavertail instruct adding lots of butter which almost masks the actual taste of the beaver meat. While other methods will make the beavertail taste like a less fatty version of marmot meat.

How to cook beaver tail?

Beavertail can be cooked in a variety of interesting ways. However, the most famous ones involve serving it on a stick. The stick is inserted where the tail was previously attached to the animal body.

Connoisseurs use a special green willow stick for this purpose. The stick and the tail should be properly attached or else the tail will come off during the cooking process.

For the cooking part, all you need to do is to roast the stick in an open flame. Keep moving the stick in circular motions to promote even cooking. 

A crispy and bubbly beavertail skin is an indication of the completion of the roasting process. The crust will come off easily when properly cooked.

The upper peel, when removed, will expose a dark and greasy flesh underneath. At this point, you can either further roast the flesh or move on to the boiling method. The next step is to tenderize the meat by placing it in the boiling water for an hour or two.

The fully cooked beavertail is soft and tender. Sprinkle salt and pepper for some flavor. Serve with ketchup or mustard if you like.

  1. Season the smoked meat with Assault and Pepper, add Worcestershire sauce, stock, and beer, and put it in the cast-iron Dutch oven along with some sliced onions, peppers, and garlic.
  1. Raise the temperature of the pellet grill to 325℉ and place the Dutch oven on top of it. Let the meat cook for about an hour or until the meat leaves the bone.
  1. When cooked, remove the oven from the grill and let the meat cool down slightly. Then pull apart the meat using a fork and return everything to the pot and give it a mix.
  1. Sandwich the shredded meat, peppers, onion, and garlic mix with provolone cheese, and banana peppers. Top off with horseradish if you want. Pour the broth over the sandwich, with the ladle, at the end.
