So, a wood fire warms the smelting stones, and after the desired temperature is attained, the embers are either removed from the oven or pushed to the back end. The ash leftovers are cleaned, and the pizza is cooked on hot stones, ensuring even heat distribution throughout the dough.

Cheese for pizza

The most popular cheese choice for the pizza is mozzarella cheese. Mozzarella can be made from buffalo milk or cow milk. In some countries, even goat milk or sheep milk is used to make mozzarella.
