  • 2 green Indian chiles which are steamed.

  • Half a teaspoon of ground turmeric.
  • 1 medium finely chopped tomato.

  • Cut the luffa into around 1-inch cubes.
  • Transfer these cubes to a colander set over a medium bowl.
  • Add the salt and set aside to drain at room temperature for around 20 minutes.
  • Rinse and drain in order to remove any excess salt and set aside.
  • Add a medium pot over a medium heat, add the ghee along with olive oil.
  • When this ghee mixture is hot and shimmery, you can add onions and cook for around 7 to 8 minutes or until the onions are softened and brown in color.
  • Add the chiles, coriander, cumin and fenugreek and fry on low heat for around 2 minutes until the spices are lightly toasted.
  • Add the garam masala and turmeric and cook for about 20 seconds.
  • Add the drained luffa and cook for around 6 to 7 minutes until the luffa is softened.
  • Add tomatoes and continue to cook until they break into a coarse sauce.
  • Add the shrimp and season using the kosher salt.
  • Turn the heat down to low and cook until the shrimps are pink in color.
  • Add the white wine vinegar.
