Ingredients

  • 1 and 3/4 cups water or stock plus more water for rinsing
  • salt to taste

Instructions 

  1. Prepare the rice, for this, add the rice to a metal or glass bowl and cover it with warm water such that all the rice is completely submerged in the water. Then gently rub and agitate the rice till the water starts to become dark purple in color.
  1. Strain the rice using a mesh sieve so that no rice kernels wash out during straining. Repeat the washing process of rice 4 more times. This step is important to wash off excess starch so that the rice does not become sticky and cook up nice and fluffy.
  1. Strain the rice and add in the rice cooker. Then add water at the ratio of 1 cup of water for every ¾ cup of black rice.
  1. Adjust the rice cooker to brown rice mode/setting If It has any. Set the timer for 25 minutes.
  1. After 25 minutes, remove the lid to let the steam vent. 
  1. Serve warm or keep in the fridge for up to 5-7 days.

Pasta method 

Ingredients 

  • 1 cup black rice, rinsed
  • 6 cups water
  • 1 1/2 tsp salt or to taste

Instructions 

  1. In a large pot, add water and stir in rinsed and thoroughly washed black rice. 
  1. Bring the water to a boil. Reduce the what to simmering and cook the rice for 30-35 minutes or until the rice is tender.
  1. Strain the rice using a mesh sieve or colander.

Pilaf method 

Ingredients 

  • 1 Tbsp olive oil
  • 1/4 medium onion, thinly sliced
  • 1 garlic clove, minced
  • 1 cup black rice
  • 2 1/4 cup water
  • 1/8 tsp salt or to taste

Instructions 

  1. In a saucepan, heat oil on medium heat. Add onions and cook until translucent. Then add the garlic and cook until fragrant. 
  1. Then add the rice and keep stirring the black rice so that they are evenly coated with the oil and are fragrant.
  1. Add water and salt. Bring the water to a boil. Reduce the flame to simmer and cover the saucepan. Let the rice cook for 30-35 minutes or until tender.
  1. Remove the saucepan from the heat and let the rice sit for at least 5 minutes before opening the lid. Fluff up the rice with a fork and serve warm.

Black rice is also known as purple rice, forbidden rice, and Chinese black rice. Black rice is a whole-grain rice variety with a very dark hull or bran. It sometimes appears black, dark purple or burgundy with some multicolored kernels. After cooking, black rice appears dark purple.

The deep color of the outer layer is due to the rich amount of antioxidants called anthocyanin. Other purple-colored fruits and vegetables such as blueberries and eggplant are also rich in this antioxidant.
