Can Vegans eat rice noodles?

Rice noodles have a long history. They originated in China during the Qin Dynasty (259-210 BC) and have been consumed for more than 2,000 years in China. The Qin dynasty was the first of the reunified China, it seems that in the southern area they preferred wheat noodles, since they were not so used to eating rice.

 To adapt, they began to make noodles with rice, and little by little this dish spread around the world. The ease of preparation of these noodles has made them a regular part of the diet for millions of people in China. In the US you can find them without problems in supermarkets (medium type or large stores).

They are consumed as an ingredient in soups or stews and as a main dish stir-fry or as a garnish for other dishes. 

Vegan Fried Rice Noodles Recipe

Ingredients:

  • 400 g of rice noodles
  • 1 onion
  • 4 cloves of garlic
  • ½ green pepper
  • ½ zucchini
  • 1 tablespoon of grated ginger
  • 2 tablespoons lemon juice
  • 3 tablespoons soy sauce

To decorate:

  • 1 tablespoon chives, minced
  • 5 chopped pickled garlic

Preparation:

  1. We put a pot with about 4 liters of water (one liter for every 100 grams of noodles) on the fire. When it boils add a teaspoon of salt and the rice noodles
  2. Turn off the heat and keep the noodles in the water for 5 minutes. You can put a kitchen clock so that time does not pass you.
  3. After the time has passed, drain the noodles with a colander. By turning off the heat earlier we avoid overdoing it. Vegan fried rice noodles
  4. Meanwhile, chop the onion, garlic, and green pepper. Grate the zucchini and ginger.
  5. Prepare a pan with olive oil, and sauté these ingredients for 5 minutes over low heat. Vegan fried rice noodles Add the soy sauce and add the Chinese noodles along with two tablespoons of lemon juice to the pan. Sauté without stirring, just tilting the pan or wok for three minutes over medium heat.
  6. Turn off the heat and let it rest for two minutes, covering the container.
  7. When it is served, add a few pieces of garlic in vinegar and little chopped chives. We do not add salt as soy is very salty.

That is why they choose to eat raw products, especially fruits and vegetables. Instead of cooking it, Raw-Vegans choose to prepare their food in the form of smoothies, mixed in a blender, or to dehydrate it.

Is vegetarianism or veganism a form of weight loss?

Foods consumed by both categories are usually low in saturated fat and cholesterol. Therefore, people who choose to follow these diets can lose weight more easily. Besides, if followed correctly, they provide a high dose of vitamins, minerals, and fiber which ensures better health.

The risks of vegetarianism and veganism

As mentioned above, one of the risks of these diets occurs when we do not provide all the vitamins and minerals needed by our body. An example of a vitamin we need to take care of is vitamin B12. 

B12 deficiency can lead to anemia, cardiovascular disease, infertility, a deficient nervous system, and poor bone health. To supplement this vitamin deficiency, supplements may be given. It is recommended to consult a nutritionist before adoption and during this diet.
