Yes,  you can leave the peeled potatoes in the water overnight. The peeled potatoes may be kept in the refrigerator for up to a week. In kitchens with temperatures lower than 40°F, leaving food out overnight increases the risk of bacterial growth and, ultimately, a foodborne illness. 

In addition to making it harder to absorb water, soaking your potatoes will result in less attractive crisp borders. If you intend to roast them, don’t drink them for longer than you absolutely have to.
