Green potato skin has a bitter taste so you should avoid eating them. There are many toxins in the potato skin that are responsible for the toxic effect of green potato skin. When potato skin is exposed to light solanine is produced in the potato along with chlorophyll. Solanine production in the potato is directly proportional to light exposure.

The temperature is also an important factor for the greening of potato skin because an enzyme involved in the greening of skin is increased when the temperature increases. So this process won’t happen when the temperature is 4 0C (refrigeration temperature). 20 0C is the ideal temperature for greening skin.

If the skin has a bitter taste it means solanine is present in high concentration. If potatoes contain high amounts of solanine don’t eat them because it can even kill you.
